Southern-Style Gravy
1 ¾ cups water
½ cup raw cashews, soaked
2 tablespoons nutritional yeast flakes
2 tablespoons soy sauce or Bragg’s liquid aminos*
2 teaspoons onion powder
1 teaspoon Bakon seasoning*
½ teaspoon Vege-Sal*
½ teaspoon garlic powder
½ teaspoon ground coriander
*Soaking cashews recommended to make the nutrients more available. It also makes the cashews soft and easy to blend into a creamy gravy. I like to soak overnight, rinse and blot dry, then freeze and use as needed in recipes.
*Bakon seasoning adds a hint of smoky flavor. Could omit if you can’t find easily. The gravy will still be delicious.
*Vege-Sal is a vegetable seasoning. Could substitute regular salt if you can’t find easily.
*Bragg’s coconut aminos is a soy-free option if preferred
Place all ingredients in blender and blend until smooth (no graininess between your fingers). Pour into saucepan and simmer over medium heat, stirring often, until it thickens.
Toasted Almonds (for Green Bean Casserole)
Bake sliced almonds on a baking sheet about 7-8 minutes at 350 degrees Fahrenheit, until golden and fragrant. Alternatively, place nuts in a dry skillet without oil for 4 to 5 minutes while stirring.
Mushroom Gravy (for Green Bean Casserole)
1 medium onion, chopped
8 ounces fresh mushrooms, sliced
3 cloves garlic, crushed
1 teaspoon thyme
1 ½ teaspoon salt
1 cup raw cashews, soaked*

Sautee onion, mushrooms, and seasonings in a little water in a pan. Blend cashews with water in a blender. Pour cashew water mixture into the pan with the onion and mushroom mixture. Cook until it thickens.
Green Bean Casserole (adapted from Sarah Frain & Stephanie Howard’s Give Them Something Better Cookbook)
5 cans green beans
1 recipe Mushroom Gravy
1-2 cups sliced almonds, toasted
Preheat oven to 350 degrees Fahrenheit. Combine green beans and mushroom gravy in a casserole dish. Bake for about 30 minutes, or until hot and bubbly. Sprinkle with toasted almonds (healthy alternative to French-fried onions).
Veggie Cutlets (adapted from Neva and Jim Bracket’s Seven Secrets Cookbook)
2 cups soaked garbanzos (if you use canned garbanzos: drain the liquid into a measuring cup and add water to equal 1½ cups total liquid)
2 tablespoons soy sauce or ¼ cup Bragg Liquid Aminos
3 tablespoons McKay’s Chicken-style Seasoning
2 tablespoons yeast flakes
1 tablespoon onion powder
½ teaspoon garlic powder
2 cups gluten flour
1. To soak soybeans or garbanzos, place at least 1 cup dry beans in about 2 cups of water and leave at room. temperature for about 12 hours.
2. Place 2 cups of soaked, drained beans in a blender with 1½ cups water and blend.
3. While blending, add seasonings and blend smooth.
4. Pour into a bowl and add the gluten flour. It will become very stiff, and the last of the flour should be kneaded in with your hands. Knead for 2 minutes. If it is too soft (not holding together in an elastic ball), knead in ¼ – ½ cup more gluten flour. This can be done in an electric bread mixer or by hand. Longer kneading will make a final product that is more chewy and elastic, while less kneading will make a final product that is more spongy and breadlike.
5. Form into two oval-shaped loaves and place on a baking sheet with parchment paper on top. Bake 50 minutes at 350°F. Cool on a rack. May be frozen.
6. When cool, slice very thin (about ⅛ inch) and simmer in the following broth for 5 minutes:
Broth for Veggie Cutlets
4 cups water
2 tablespoons Bragg Liquid Aminos
2 tablespoons Chicken-Like or Beef-Like Seasoning (depending on flavor desired)
7. For a slightly thicker broth (which makes a richer, more attractive presentation), dissolve 1½ tablespoons cornstarch in ¼ cup water and gradually stir into the simmering cutlets.
8. Serve with mashed potatoes or use in other recipes.
Sweet Potato Pie (Adapted from Minimalist Baker)
1 (9-inch) vegan pie crust
1 ¾ cups roasted sweet potato purée (2 medium sweet potatoes (~2/3 lb or 300 g each) yield ~1 ¾ cups or 425 g sweet potato purée)
1 cup water (plus more for soaking cashews)
1/2 cup maple syrup
1/4 cup raw cashews
2 Tbsp cornstarch
2 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp sea salt
1. ROAST SWEET POTATOES: To make sweet potato purée, halve the sweet potatoes lengthwise and place cut side down on a parchment-lined baking sheet. Bake at 375 F (190 C) for ~40-45 minutes or until very tender to the touch (up to ~1 hour if your sweet potatoes are on the larger side). After baking, move to one side of the pan and wrap the parchment paper over top to steam. Let steam for 5 minutes. Then peel away skin and mash in a mixing bowl (or food processor). Set aside.
2. SOAK CASHEWS: Add cashews to a heatproof bowl and cover with hot water by at least 1-2 inches. Let them soak for 15-20 minutes, then drain and set aside.
3. PIE CRUST: If making a homemade pie crust, prepare it while the cashews soak and par-bake if indicated in the pie crust recipe (or the pie crust package if using store-bought).
4. Before proceeding with the filling, double check that your oven is preheated to 375 F (190 C).
5. Place the mashed sweet potatoes into a high-speed blender with the water, maple syrup, soaked and drained cashews, cornstarch, vanilla extract, cinnamon, nutmeg, and sea salt. Blend on high until smooth and creamy.
6. Pour the filling into your prepared crust and smooth the top with a rubber spatula (if desired). Bake at 375 F (190 C) for 10 minutes. Once the 10 minutes is up, reduce the oven temperature to 325 F (162 C) and bake for 45-50 minutes until the center is just slightly jiggly. The center should be more solid than liquid with a structured jiggle instead of one that looks more liquidy. Remove from the oven and let cool at room temperature for 30 minutes before cooling it completely in the refrigerator for about 3 hours.
7. Serve cold topped with dairy-free whipped cream (coconut or cashew) if desired. Store leftovers in the refrigerator lightly covered for up to 4-5 days or in the freezer for 1 month (or longer).

Zucchini Rollup
Cashew Cream Sauce:
1 ½ cups raw cashews
½ head cauliflower
¼ cup water
3 Tablespoons olive oil
Salt to taste (½ to 1 teaspoon)
Directions:
Cut cauliflower in large pieces and boil for 20 minutes in salted water. Drain. Put cooked cauliflower, ¼ cup water, 3 Tablespoons oil, and ½ to 1 teaspoon salt in blender and pulse until smooth.
Zucchini Preparation:
Use a mandolin slicer on the thicker setting to slice zucchini lengthwise (about 4 medium zucchini). Save extra pieces for the filling. Spray a cookie sheet with olive oil and place the zucchini in a single layer. Spray the top with olive oil too and sprinkle lightly with salt. Bake at 400 degrees for 5 minutes to soften zucchini.
Filling:
1 medium onion, finely diced
8 oz pkg mini portobello mushrooms, finely diced
Any leftover zucchini scraps, diced
Eggplant, diced (optional)
2 teaspoons garlic (from tube)
Large handful of fresh basil, chopped
Directions:
Saute with olive oil, salt, and Italian Seasoning until well cooked down. Add garlic and basil and saute a couple more minutes. Set aside to cool.
Assembly:
Pour ½ jar of spaghetti marinara sauce in a 9 x 13 pan. Spread a spoonful of cashew cream on each zucchini strip. Top with a spoonful of filling, spreading along the length. Carefully and loosely roll up the zucchini and place in the pan in rows. Top with more sauce. Bake at 350 degrees for 30 minutes.
Croutons
Hearty bread (not soft bread)
Garlic salt
Olive oil
Italian Seasoning
Directions:
Put the cubes in a bowl and toss with garlic salt and olive oil and Italian seasoning. Place the seasoned cubes in an air fryer at 250 degrees for about 10 minutes.
Carob Rice Krispy Treats
¾ cup honey
1 cup peanut butter
1 cup carob chips
1 cup coconut
1 teaspoon vanilla
3 cups Rice Krispies
Directions:
Place honey and peanut butter in a pot and heat. Remove from heat and stir in carob chips, coconut, vanilla, and Rice Krispies. Line a 9 x 9 pan with parchment paper. Press mixture in pan and chill. Cut into squares.

Red Lentil Daal
TOTAL TIME: 40 minutes: Serves 4
Ingredients:
1 tablespoon vegetable oil
1 teaspoon brown or black mustard seeds
2 teaspoons cumin seeds
15 fresh or dried curry leaves, chopped
1/2 to 1 tablespoon curry powder or garam masala
1 teaspoon paprika
1/2 teaspoon finely grated fresh ginger
1 teaspoon of mushroom seasoning (without MSG)
2 tablespoons tomato paste
1 cup finely chopped mixed vegetables, such as cauliflower, zucchini, or green
beans (optional)
1 1/2 cups red lentils, thoroughly rinsed and drained
1 teaspoon sea salt
1 cup canned reduced-fat coconut milk
2 tablespoons chopped fresh cilantro leaves
Method:
In a large deep pot, heat the oil over medium heat. Add the mustard and cumin seeds and cook, stirring constantly, until they pop, about 1 minute. Add the curry leaves, curry powder, paprika and ginger and cook, stirring, until fragrant, about 2 minutes. Add the tomato paste and mushroom seasoning and stir until just combined.
If you’re adding mixed vegetables, add them now and cook, stirring, until just tender, about 3 minutes.
Add the lentils, salt, and 3 cups water. Bring to a boil, reduce the heat to a simmer, and cover. Cook until the lentils are soft and tender, about 10 minutes.
Stir in the coconut milk, cover, and cook until the mixture is super creamy, 10 to 12 minutes. If it becomes too thick, add up to 1⁄4 cup water.
Serve topped with the chopped cilantro.
Store leftovers in a sealed container in the refrigerator for up to 3 days.
Kenya Chapati Version
TOTAL TIME: 30 minutes: Serves 8
Ingredients:
4 cups of whole wheat flour
3 tbsp olive oil
1 cup warm water
Salt to taste
Method
Prepare the Dough:
In a large mixing bowl, combine the whole wheat flour, salt and oil.
Gradually add the warm water to the flour mixture while stirring with a spoon or your hand.
Continue kneading the dough until it is smooth. This should take about 10 minutes. If the dough is too sticky, add a little more flour; if it’s too dry, add a bit more water.
Rest the Dough:
Cover the dough with a damp cloth or plastic wrap and let it rest for about 30 minutes. This will make it easier to roll out and will improve the texture of the chappati.
Shape the Dough:
After resting, divide the dough into equal portions (about 8 pieces). Roll each portion into a ball.
On a lightly floured surface, take one dough ball and roll it out into a thin circle (about 6-7 inches in diameter) using a rolling pin.
Cook the Chappati:
Heat a flat skillet or pan over medium heat. Once hot, place the rolled-out dough on the skillet.
Cook for about 1-2 minutes or until you see bubbles forming on the surface. Flip the chapati and drizzle or brush a little oil on the cooked side.
Press down gently with a tablespoon and cook for another 1-2 minutes or until golden brown spots appear. Flip again, oil the other side, and cook for an additional 1 minute. Repeat this process for all the dough balls.
Serve:
Serve warm with your favorite vegan dishes like curries, stews, or as a wrap.
Indian Basmati Rice
TOTAL TIME: 30 minutes: Serves 8
Ingredients:
1 cup washed Basmati rice
2 cups water
1 tablespoon olive oil
2-3 cloves
2-3 green cardamom pods
1 bay leaf
1 teaspoon cumin seeds
1 teaspoon turmeric
Salt to taste
Method
Rinse the Rice:
Rinse the Basmati rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.
Soak the Rice:
Soak the rinsed rice in cold water for about 20 minutes. This helps the grains to cook evenly and become fluffy. (Optional but recommended for best results.)
Prepare the Rice Cooker:
Plug in your rice cooker and set it to the “cook” or “sauté” function if your rice cooker has this feature. If not, you can use a small pot on the stovetop for this step.
Toast the Spices:
In the rice cooker (or small pot), add the oil.
Then add the cumin seeds and let them sizzle for a few seconds until they release their aroma.
Add the cloves, cardamom pods, and bay leaf. Sauté for another minute, stirring constantly to prevent burning.
Add the Rice:
Drain the soaked rice and add it to the rice cooker.
Stir gently to coat the rice with the oil and spices.
Cook the Rice:
Add the 2 cups of water and salt to taste. Stir well.
Close the rice cooker lid and set it to the “cook” function.
Finish Cooking:
The rice cooker will automatically switch to the “warm” setting once the rice is cooked. Let it sit on the “warm” setting for an additional 5-10 minutes to allow the steam to finish cooking the rice and make it fluffy.
Fluff and Serve:
Open the rice cooker, fluff the rice gently with a fork, and remove the whole spices (cloves, cardamom pods, and bay leaf).
Garnish with fresh cilantro if desired and serve warm with your favorite Indian dishes.
Zim Style Spinach Recipe
TOTAL TIME: 15 minutes: Serves 2
Ingredients:
1 bunch of fresh spinach (about 1 pound), cleaned and chopped
1 tablespoon vegetable oil
1 medium onion, finely chopped
1 medium tomato, chopped
Salt to taste
1 tablespoon peanut butter (optional, for a richer flavor)
Method
Prepare the Spinach:
Rinse the spinach thoroughly and chop it roughly. If the spinach has thick stems, remove them or cut them into smaller pieces.
Sauté Onions:
In a large skillet or pan, warm the vegetable oil over medium heat. Add the chopped onion and cook until it becomes translucent and soft, about 5 minutes.
Add Tomato:
Add the tomato now and cook until it breaks down and becomes slightly saucy about 5 minutes.
Cook Spinach:
Add the chopped spinach to the pan. Stir well to combine with the onion and tomato.
Finish:
If using, stir in the peanut butter for a creamy, nutty flavor. Adjust seasoning with salt to taste. Cook for an additional 2 minutes to ensure everything is well mixed and heated through.
Serve:
Serve hot as a side dish or over rice, sadza (a traditional Zimbabwean staple), or with other main dishes.

Haystacks
This is a classic wannabe Mexican style meal. It is very easy and adaptable to most taste preferences. Start with a base layer of chips or brown rice. Layer beans, greens, onion, olives, avocado, and salsa. Very simple, easy to make and delicious.
Bulgur Burger (7S p. 35)
1 c. bulgur wheat
½ c. ground walnuts
1 clove garlic
½ tsp salt
1 T taco seasoning
1 ¼ c. water
1 T dried onion flakes
1 T food yeast flakes
1 T Bragg Liquid Aminos
8 oz can tomato sauce
Mix all ingredients in a saucepan and bring to a boil. Reduce heat, cover, and simmer until thick. Remove from heat and let sit covered for 10 minutes.
Tofu “Sour Cream” (7S p. 58)
12 oz box MoriNu Silken Soft Tofu, or 9 oz regular tofu and ½ c water
½ c. raw cashew nuts
1 tsp salt
2 T chives
1 T lemon juice
1 tsp onion powder
Puree, chill and serve.
Nacho “Cheese” Sauce
2 Cups water
¼ cup raw cashews
1 cup nutritional yeast flakes
1 tsp salt
¼ tsp garlic powder
1 tsp Paprika
2 Tbsp cornstarch
1 tsp lemon juice
½ tsp onion powder
½ tsp cumin
Combine all ingredients and blend until smooth. In saucepan whisk constantly over medium heat until thickened, about 5 minutes.

SCRAMBLED TOFU
In a large pan Saute:
1 large diced onion
1 large diced bell pepper
1 Tbsp fresh minced garlic
Add: Two 16oz water packed extra firm tofu crumbled up
2 Tbsp chicken seasoning
1 Tbsp dried parsley
1 tsp turmeric powder
½ tsp dried basil salt or Braggs to taste
Stir frequently over medium heat until you have desired dry consistency. Recipe yields 6-8 servings.
APPLE/BLUEBERRY OAT DELIGHT (Adapted from Vicki Griffin’s appl’oat delight)
2 cups Oats (rolled or quick)
1 cup blueberries (fresh or frozen)
½ cup shredded, unsweetened coconut
½ cup pecans, chopped
2 apples, shredded
3 cups milk (soy, almond or rice)
½ tsp salt
1 Tbsp Vanilla
Spray an 8×8 or round baking dish. Sprinkle 2/3 cup of the oats on the bottom of the dish. Next, layer ½ the blueberries, ½ the coconut and pecans and 2/3 cup more oats. Sprinkle all of the shredded apples on top. Add the remainder of the raisins, oats, and coconut/pecan mixture. Whiz the salt, vanilla and milk in the blender; pour over layered mixture. You may need to add more milk until liquid comes to the top of the mixture. Cover and bake 45-60 minutes at 350 degrees. Uncover for a few minutes to crisp and brown top.

Cyndi’s Zucchini Burgers (SMALL BATCH)
1 Large Onion, peeled & quartered
2 1/4 cups grated Zucchini
1/2 cup raw Cashews
1 Tbsp. Chicken Style Seasoning
3/4 cup quick oats
1 Tbsp. Nutritional Yeast Flakes
1 1/2 cooked brown rice (leftover rice works great)
3/4 tsp salt
Place onions in chunks in blender and begin blending. After achieving onion milk, add the cashews and blend together until smooth. Then add seasonings and blend. Place oats and rice in a large mixing bowl. Add the zucchini and the blended mixture to dry ingredients and mix well. May use disposable gloves and mix by hand. Shape into patties and bake on Parchment paper at 350 degrees for 30 minutes on each side. These patties are superb for freezing and keep well.
AFRICAN PEANUT SOUP Adapted from I Love Veggies by Mary Bernt
Yield: ~ 10 cups
1 very large onion, diced
1 large bell pepper of color, diced (prefer not green, but red, yellow, or orange)
3 cloves of garlic, chopped or pressed
2 (14 oz.) Del Monte brand Basil, Garlic, Oregano Diced tomatoes
1 (14 oz.) can tomato sauce
6 cups water (I start with 4 cups and then evaluate when finished if needs more)
¼ cup “Chicken-like Seasoning” by Mary Bernt (see next recipe)
Sprinkle of cayenne pepper (optional)
1 cup cooked brown rice (leftover works fine)
½ bunch cilantro, chopped (optional, but very nice if you like it)
2 – 3 Tbsp. of maple syrup
2/3 cup Crunchy peanut butter (natural – no added sugars or oils)
Sauté onion, pepper and garlic in a very small amount of water in bottom of pan. Add remaining ingredients EXCEPT for the peanut butter. Simmer for 15 minutes. Add peanut butter and stir thoroughly. Can be served immediately but is tastier if made ahead and refrigerated overnight. Leftovers are superb! If you are lucky enough to have any left over. So yummy!!
CHICKEN-LIKE SEASONING (From Mary Bernt’s book “I Love Veggies” and used in recipe above)
4 cups nutritional yeast flakes
¾ cup onion granules
½ cup plus 2 TBSP sea salt
½ cup pizza seasoning (see recipe below to make your own pizza seasoning) (I buy Organic Pizza Seasoning from Frontier Herbs online)
¼ cup Sucanat (Sugar Cane Natural)
3 Tbsp. garlic granules
In a perfectly dry blender, place nutritional yeast and blend briefly to powder it. Add remaining ingredients and allow to blend until well mixed. Finally, stop blending and hand-stir in ½ cup of dried Parsley flakes. Do not blend this final ingredient as it will turn the entire mixture green. Store this seasoning in a glass jar or Tupperware. It keeps well for a very long time. This is used in the African Peanut Soup featured above and is also a terrific single seasoning for a yummy scrambled tofu. Use 3 Tbsp. stirred into one pound of Firm Tofu and cooked in a nonstick skillet until slightly browned.

Oat Burgers (from Depression the Way Out by Dr. Neil Nedley)
Ingredients:
4 cups water
½ cup Braggs Aminos or soy sauce
¼ cup nutritional yeast flakes
2 Tbsp canola oil
1 Tbsp flaxseed meal
1 Tbsp dried sweet basil
2 tsp garlic powder
2 tsp onion powder
1 tsp Bakon seasoning
1 tsp ground coriander
1 tsp dried sage
1 cup walnuts, finely chopped
4 cups rolled oats
1. Place a 2 quart pan on a burner over medium heat and add the ingredients in the given order except the rolled oats.
2. Bring the water to a slow boil, quickly sir in rolled oats and immediately remove from heat. Cover and set aside to cool.
3. Preheat oven to 350 degrees.
4. Form oat mixture into three-inch patties and place on oiled baking sheets.
5. Bake for 20 minutes on each side. Serve with whole wheat buns, soy mayonnaise, lettuce, onions, tomato and pickles.
Rice Mayonnaise (from Neva & Jim Brackett’s 7 Secrets Cookbook)
Ingredients:
1 can coconut milk
1 ¼ cups hot, well-cooked rice or millet
¼ cup lemon juice
1 ½ Tbsp honey (or 2 of sugar)
2 tsp salt
1 tsp onion powder (be sure it is the fine powder, not granulated onion)
Place all ingredients in blender, and blend for at least 1 minute until silky smooth. Chill to thicken.
Quinoa Salad by Sonia Morales
Ingredients:
1 cup quinoa
½ English seedless cucumber diced
1 large tomato diced
15 oz can beans (any color) drained
6 oz can black olives sliced
1 Tbsp dry or ¼ cup fresh oregano
1/3 cup olive oil
The juice of a large lime
Himalayan salt to taste
Cook quinoa as directed on bag. Let it cool. Then add all vegetables, oil, lime, oregano, and salt. Stir all together and it’s ready to eat.
Walnut Maple Cookies (from Depression the Way Out by Dr. Neil Nedley)
Ingredients:
2 ½ cups walnuts, ground in food processor
2/3 cup whole wheat pastry flour
1 tsp salt
1/3 cup flaxseed meal
1/3 cup carob chips
½ cup + 2 Tbsp maple syrup
2 tsp vanilla
1. In a small bowl add all the ingredients in the given order. Mix well.
2. Spray a large cookie sheet and preheat the oven to 350 degrees.
3. Drop dough on cookie sheet with a spoon and flatten with a fork.
4. Bake for 10 to 15 minutes or until golden brown, checking often to prevent burning.
5. Let cool before removing from the cookie sheet. Makes one dozen.

Spicy Thai Salad
1/2 purple cabbage
1 cup cashews
1-1/2 cup green onion
2 cups cilantro
1-1/2 cup raisins
1 tsp. himalayan salt
1/2 cup apple cider vinegar
2 Tbsp. sesame oil
2 Tbsp. toasted sesame oil
Chop cabbage into manageable size pieces for food processor.
Process cabbage to coleslaw texture.
Mix in remaining ingredients, except cilantro.
Sauce
1/2 cup cashew butter
1/4 cup apple cider vinegar
4 Tbsp. toasted sesame oil
1/8 tsp. chili oil or powder
Mix ingredients for sauce together.
Add sauce to cabbage mixture.
Fold in cilantro.
Tabouli Salad
1 cup quinoa (or bulgur wheat)
2 bunch parsley
3/4 cup green onion
3/4 cup cucumber
3/4 cup red bell pepper
3 roma tomatoes
1 Tbsp. fresh mint (or 1 tsp. dried)
Juice of 2 lime
Juice of 1 lemon
3 Tbsp. olive oil
1/2 – 1 tsp. Himalayan pink salt (or to taste)
Prepare quinoa (or bulgar wheat) per package instructions. Parsley can be very sandy, so wash thoroughly, and pinch off just the green leafy part. Dice veggies and parsley. Blend mint, lime juice, lemon juice, olive oil, and salt together. Mix all ingredients together.
This dish is better when flavors have a chance to mingle. Can be made the night before serving.
Taco Meat
1-1/2 cup walnuts
1 tsp. taco seasoning (recipe below)
2 tsp. tamari
1/4 tsp. coriander
1-1/2 tsp. cumin
1/8 tsp. cayenne
Mix and process all ingredients in a food processor.
Homemade Taco Seasoning (makes 1/2 cup)
4 Tbsp. chili powder
1 tsp. garlic powder
2 Tbsp. cumin
1 tsp. onion powder
4 tsp. coriander
1 tsp. oregano
2 tsp. paprika
1/4 tsp. cayenne
2 tsp. sea salt
Mix all ingredients together.
Taco Cheese Sauce
2 cups cashews
1/2 red bell pepper
1/4 cup water
1/8 tsp. cayenne (add more to taste)
1 Tbsp. lime juice
1-1/4 tsp. sea salt
1 clove garlic (add more to taste)
Soak cashews in purified water for at least 1 hour. Add cashews and all ingredients to a blender. Blend until smooth.
Peanut Butter Cookie Bites
1 lb dates, pitted and chopped
3 Tbsp. (heaping) peanut butter
1/2 cup roasted peanuts, chopped
1 tsp. vanilla
Dash of Himalayan pink salt
Place all ingredients into a food processor. Process until mixture forms a soft ball. Use a cookie scoop, or spoon, to form into bite-size cookies.
